Fregola

Just when you think you know all the pasta varieties, along comes another. sardo

Fregola is more like couscous than pasta, made in Sardinia, and formed into 2-3mm balls then toasted. It should be cooked for around 12 minutes then drained and topped with a rich ragu or other topping or cheese.

Fregola makes a good change from other carbs such as rice and couscous.
