SCOTTISH DISHES

The Scots are great bakers. Look for the best breads, buns and pastries here. They are also very fond of fish - so salmon, herrings and other seafood (always fresh-caught, sometimes smoked) is exceptional. And yes, oatmeal features too - not only in the ubiquitous breakfast staple, porridge, but also in breads and biscuits and in dessert.

Produce and products: oats, Scotch whisky, grouse and other game birds, haddock, Arbroath Smokies, venison, salmon, Ayrshire roll (bacon), ale

Traditional dishes: oatcakes or bannocks, baps, Dundee cake, potato scones, black bun, shortbread


WELSH DISHES

Welsh lamb is valued all over the UK. Because the lambs graze on fresh grasses and wild herbs, the meat has a particularly good flavour. At the coast, various seaweeds are still used in some dishes.

Produce and products: lamb and mutton, leeks, duck, salmon, freshwater fish, cockles, scallops, oysters, laver (seaweed), dairy and cheese,

Traditional dishes: bara brith, oatcakes, crempog (pancakes), mutton pies, cawl (stew), faggots, salt duck, Glamorgan sausages, Caerphilly cheese

 

NORTHERN IRELAND DISHES

Ireland is a green and lovely island, and north or south, fresh produce is valued and used. Look for local cheeses, and dishes using apples, berries and other fruits.

Irish tea is beautifully made at the Bewley's chain of tea-shops. And do have a Full Irish Breakfast at least once during your visit!

Produce and products: potatoes, lobster, prawns, oysters, cockles, winkles, pork, dulse, carrageen and laver (types of seaweed), black pudding, ham, Irish whiskey, Guinness

Traditional dishes: colcannon, Ulster fry, boxty, soda bread, barmbrack, Irish stew

 

CHANNEL ISLAND DISHES

More French than English in many ways, the Channel Islands feature dairy products from their Jersey and Guernsey cows, and fresh vegetables raised in hothouses throughout the islands.

Jersey produce and products: Seafood is plentiful in the Channel Islands. Try local mussels, ormer (like abalone), crab (chancre and spider), lobster, and fish. Vegetables - Jersey Royal potatoes, tomatoes. Jersey fudge, made with the richest cream.
