This is what you could be eating if you have Christmas dinner menu at Hotel Matilda in historic San Miguel de Allende, Mexico.

This menu was created by chef Jorge Boneta, who creates modern interpretations of his grandmother's recipes for the hotel restaurant. San Miguel de Allende is a colonial jewel of Mexico, and Hotel Matilda is the only contemporary boutique hotel in the destination. Opened last year, it has built quite a buzz as a showcase for distinctive contemporary art.

Here's what Chef Boneta said about his menu: "The New year's Eve menu and Christmas menu both are created thanks to my grandmother, because that's the only time that we are really close together like family. I tried to make a menu with different flavors and textures, just like a roller coaster. And at the end of the dinner you can say: "this is Matilda." As a Mexican I come from a family where the grandmother always was cooking. The culinary concept for Matilda is creating memories in people's minds."
