NEED TO KNOW: Liberia also has a tradition of baking imported from the United States that is unique in West Africa. UNUSUAL FOODS: Fufu,or dumboy (variants of the name include foofoo, foufou, foutou), is a staple food of West and Central Africa. A thick paste of boiled starchy root vegetables pounded to a paste.
FESTIVE FOODS: Liberian rice bread, with cream of rice and mashed bananas, the Liberian pineapple nut bread or plantain gingerbread. HEALTHY EATING: Drink bottled water. Vegetarian dishes are popular.
