In Melbourne, Victoria, Jannick Zester (owner of fashion retail shops Dansk) and his business partner Steve Powell have transformed Windsor's Swan Hotel into The Wolf and I. Located in the southern end of Chapel Street, the space includes an 80-seater dining area, function rooms, a front bar and two outdoor areas. But, the real twist is that in addition to exposed bricks, white walls and striking artwork, there are kitschy flourishes like a feature wall of 60 vintage Singer sewing machines and two beer-swilling deer mannequins and of course, a sharply dressed wolf with and his taxidermy-grin. As well as upmarket pub grub, European influences takes the menu to even tastier heights offering chicken liver parfait with apple and pear chutney, brioche bread and sweet wine jelly, and green and white Victorian asparagus with truffle poached egg.
