Flaming cheese wheels

It is said that during the Great Fire of London centuries ago, a massive pit which had been used to store cheeses, caught on fire and burned for a long time.

This flaming cheese wheel, of course, has nothing to do with that piece of trivia. This is fun!

Right in time for winter Salt Meats Cheese are serving up delicious hot pasta straight out of a huge parmesan wheel, exclusively at its Broadway, Sydney, restaurant. Every Wednesday night, pasta lovers will be treated to fresh strozzapreti with flamed brandy and cacio e pepe (cheese and pepper).

This simple yet exciting way of serving pasta involves hollowing out a wheel of Parmigiano Reggiano until it resembles a bowl. Warm brandy is then poured into the wheel and set alight until the alcohol burns off, leaving nothing but pure melted cheese goodness. Piping hot pasta is then added and stirred, as each strand is coated with a mouth-watering cheese sauce.
