She may be Australian by birth, but Jess Pryles proudly claims to be a 'Texan by choice'. Little wonder then that she feels right at home putting together this meaty cookbook. A grill-guru from way back, Jess admits she once felt intimidated about cooking meat, but now has a full-blown obsession about it. Since her 'meatducation' she has co-founded the Australasian Barbecue Alliance, and hosted Australian and American culinary TV shows, even judging the biggest BBQ competition in the world. Definitely not a book for your vegan or vegetarian friends, this book explore all meats and every which-way to deal with them. Of course, barbecuing and grilling is at the fore, but Jess Pryles also looks at ways you can use your oven and slow-cooker as well. Jess is also inventive. Where else would you find a recipes for a patty melt (aka cheeseburger) in a pretzel bun for instance? Her meat combos are unique too. Blackberry lamb shanks, cola short ribs, peanut butter jelly wings, turkey and dumplings, coffee-rubbed kangaroo - and others, too many to mention, but you get the idea. Where would a good meat cookbook be without the extras. Jess has thought of that too, with vegetables, salads and breads to complete the meals. The book wraps with rubbing salts, glazes, sauces, condiments and stocks.
