When a book begins 'There is no Paradise. God lives here!' you are allowed to have great expectations. With the presentation of superb photographs and even more superb recipes, those expectations will be certainly realised. This is a big book, filled with recipes that are begging to be tried by the home cook. They are not unduly difficult - indeed, some, like the potato tortilla has four ingredients - but these are favourites, hence the title of 'cult recipes'. There is plenty for everyone in this book. Vegetarians will love mushroom ravioli or spinach with raisins and pine nuts, the latter channelling Spain's proximity to North Africa. Sausages abound, too, as does bacalao (the Iberian peninsula's cuisine backbone), irresistible in a claypot stew with vegetables, for instance. However Spain's brilliant citrus fruits also star in many sweet dishes too, such as mandarin sorbet or oranges three ways. This book has it all: tapas, family dishes, show-off pieces, as well as section on basics and even an address book of places where you don't even need to cook at all - simply take a trip to Spain and turn up at one of the recommended restaurants!
